Efo elegusi simply means, egusi made with a higher quantity of green vegetables like spinach, ugh, kala, etc.
Efo Amunututu(Malabar Spinach ), is typically used as a topping African dish, Yoruba to be precise. Efo Amunututu can be enjoyed with a wide variety of dishes including pounded yam, demo, Amala, Fufu, etc.
INGREDIENTS
Efo Amunututu
Dry grounded egusi Meat
Ponmo
Palm oil
Grounded pepper Locust beans (Iru) Maggi
Salt

HOW TO PREPARE EFO ELEGUSI WITH EFO AMUNUTUTU

  1. In a clean pot, add palm oil. Heat it up for 2 minutes and add sliced onions.
  2. Proceed by adding the egusi paste, make sure the egusi paste is thick. Mix it with
    seasoning powder.
  3. There is a technique to fry the egusi, when you introduce the egusi into the oil allow it to stick a bit to the bottom of the pot before stirring, It helps to make the soup lumpy.
  4. Pour in pepper mix (Tatase, Rodo, Sombo, and Onions). Stir together.
  5. Add in your seasoning, salt, and locust beans, and cook for 15 minutes on
    medium heat.
  6. Pour in your boiled meat, ponmo, and your fish.
  7. Add in you sliced and rinsed Efo amunututu(Malabar Spinach )and stir till the
    egusi mix up with the efo. Leave for 2 minutes.
  8. Your Efo elegusi amunututu is ready to serve with any of your favourite swallows.
